Synopsis: Galician nouvelle cuisine has the peculiar trait of a love for exploring the past, for recovering the flavours left behind by the modern world, for lending dignity to products considered inferior. The Nove Group is an association of chefs who reach beyond the clichés to promote this cuisine of the future.
